What Does "Cold Pressed" Oil Really Mean?

Cold pressed oil is extracted by slowly crushing seeds or nuts at low temperature, without chemical solvents. Traditional wooden presses, known as ghani or chekku, have worked this way for generations.

Because the process is gentle and the oil is not refined, it keeps its natural colour, aroma and taste. That is why a good cold pressed oil smells of the seed or nut it came from.

Store your oil in a cool, dark place with the lid tightly closed, and rotate between different oils for variety in your cooking.
